500g Lamb or Beef (cubed)
The Greens
A blend of Parsley, Cilantro, Chives, and Fenugreek
1 Onion
3-4 Dried Limes (Limoo Amani)
Turmeric
Salt & Pepper
Sauté the finely chopped herbs in oil over medium heat for 15-20 minutes until they turn a deep, dark green. This is the soul of the dish.
Sauté diced onions until golden, then add the meat and turmeric. Brown the meat to lock in the juices.
Combine the meat, herbs, and pierced dried limes in a pot. Add water and simmer on low heat for 2 hours. Add kidney beans in the final hour.
